As the best buffalo mozzarella should be, it is made with buffalo’s milk, which is collected by dedicated hands everyday from selected farms in the Piana del Sele area of Italy. Buffalo mozzarella comes in a pearl white ball. It is firm, but elastic, with a shiny surface reminiscent of fine bone china. Upon cutting it open, you will find the creamy, layered and porous insides of the cheese. It has a delicate, creamy and slightly acidic taste that pairs itself perfectly with many other flavours.
