Yorkshire Dama Cheese Ltd - Ricotta Cheese

Ricotta is a creamy white, mild, fresh cheese with a soft texture and a slightly sweet flavour. It is made from cooking the whey left over from our halloumi cheese making process. It is reported that Ricotta has five times more calcium than cottage cheese.
It can be used in both savoury dishes and sweet. Our favourite is to serve it in a warm pancake drizzled with honey.
