Armagh Apple Cider vinegar is pure and unpasteurised, and contains 'The Mother' of vinegar, naturally occurring strands of enzymes and connected protein molecules. Made using only the finest apples grown locally in the orchards of County Armagh. The traditional set-up for vinegar-making is known as the Orleans or barrel process and consists of a barrel laid on its side, three-quarters full of liquid with open access to air. Modern vinegar factories do not use this method, because it is far too slow Cider vinegar from the Orleans process is generally fairly clear but it may develop a further haze on storage in bottle. Armagh Cider Vinegar is manufactured using the Orleans or Barrel process, matured over 10 months which produces a natural Clear Vinegar Compared to bulk produced vinegar which is cloudy. Armagh Cider Vinegar is a wholesome way to add a zesty flavour to most foods, and can be used as a tonic to promote digestion and a pH balance.
