Known for its orange-red flesh, delicate flavour and firm texture. It is also the richest in Omega 3 of all our salmons.
Our Coho is fished in the Nushagak River district of Bristol Bay, Alaska. These salmon were caught by small-boat harvesters at the tail-end of the summer salmon run. The majority of Coho return to spawn in the month of August, after the high-volume sockeye salmon season is over. Local fishermen will often fish part-time during August, with many of their days focused on canning, smoking, and drying Coho for subsistence needs throughout the Winter months.
Also known as ‘silver’ salmon, they are fiercely territorial. Adult Cohos weigh 3kg – 5kg and grow up to 45cm – 75cm, so are much bigger than Pink or Sockeye. Large adults in salt water or recently arrived in fresh water are bright silver with small black spots on their backs. Coho enter spawning streams from July through to November across the region and spawning is carefully regulated as it is everywhere in Alaska.
