Megrim - lepidorhombus whiffiagonis
Also known as Cornish Sole, Megrim is a deep water, flatfish and tastes delicious. Like a flat version of a bass, megrim uses it’s huge mouth to suck up its prey, which mainly consists of smaller fish. They are pale in colour and have delicious tender meat as they are from the same family as Turbot. Megrim however is considered a lesser valued fish in the UK than the Dover Sole or Lemon Sole, and 90% of it is exported to Spain. Granted, the megrim is not quite as delicate, not quite as easy to work with or refined in texture. But to most palates it still holds flavour and it remains a pleasant flatfish to pan-fry in lemon butter, perhaps, or serve on the bone. We can supply them either whole or filleted, so being a shade harder to prepare needn’t put you off!
Biology
Megrim are mostly caught by deep-water trawl fisheries, often beam trawlers. Ours are caught by small-scale trawler boats under 10m in length in deeper water than areas our static-netters fish. The stocks of megrim are reportedly healthy although there is need for better studies of the stock. In Cornwall the minimum landing size is 25cm.
Cooking Instructions
Slash the skin side of the fillets. Mix olive oil, a dash of good soy sauce, the juice of one lime, some crushed garlic and salt and pepper. Fill the slashes with the marinade and rub onto both sides of the filet. Place on a greased baking tray and cook for 10 minutes in a hot oven.
