From hives in Rode, where from April to May the bees are surrounded by the brilliant yellow flowers of Oilseed Rape.
The bees go bonkers for it, they love it and produce honey in abundance. With a high glucose:fructose ratio the honey granulates quickly so it must be quickly harvested or it sets in the frames. Great news for us, as we get an early spring crop of creamy-white, delicious honey.
We only coarsely filter the honey so there's a lot of pollen left in. We don't pasteurise our honey as this also kills good bacteria, enzymes and anti-oxidants. This honey will granulate quickly but can be made runny again by gentle heating.
Honey is not suitable for children under 18 months.
