Fresh Cod Cheeks are a cheaper alternative to a fillet, more succulent with no preparation. Cod cheeks are good value nuggets of juicy fish with snow-white flesh all too often ignored on the fishmonger’s slab. As sweet and chunky as a scallop, they deserve to be used more often.
Just dust in seasoned flour and pan fry in butter. Serve with a wedge of lemon, green herb oil or caper butter. In respect for the Cod, use the cheeks!
