Alice's Garden - Strawberry, Ginger And Lemon Verbena Switchel

Switchel is an old fashioned drink which originated in the Caribbean and was made popular by the American Colonies.

Switchels are traditionally made with fruit, ginger and raw apple cider vinegar and are naturally fermented. However, following an "incident" involving unintentional fermentation of elderflower cordial (in which the fridge came off worse), I decided to turn it into cordial and leave brewing to the experts!

This refreshing drink is made with strawberries from my plot and infused with lemon verbena and ginger for their beneficial health giving properties. Dilute with sparkling water to recreate the fizz of a ferment without the risk! Like shrub, the switchel will mellow as it ages.



Ingredients: strawberries, sugar, apple cider vinegar, lemon juice, ginger, lemon verbena infusion.
