Water kefir is made by soaking water kefir grains in sugared water. These grains aren’t actually grains like barley or wheat but a starter culture made of beneficial bacteria that will transform your water into a sometimes fizzy fermented drink which you can then infuse with other flavours (my favourite is ginger, lemon, turmeric and black pepper).
When you receive your grains drain the liquid they are in (throw this away as this is just tap water)
1. Rinse your grains in tap water
2. Transfer to a large jar (750ml or larger)
3. Add the same amount of raw, unrefined sugar as there are grains (not an exact science so do it by eye).
4. Fill up to the top with filter water (I use bottled mineral water)
5. Give it a little mix and leave for 1-3 days (depending on how hot it is).
6. When you see bubble when you give the jar a little shake your water kefir is ready simply strain and repeat steps 1-6. If you want to flavour your kefir water transfer the liquid into a new jar and add finely chopped fruit, spices and even herbs (watch out strawberry's make it very fizzy!) leave for 1-3 days, strain and can be bottled and kept in the fridge for up to 5 days.
This process can be done in the fridge (slower process) or on your kitchen worktop (faster).
Your kefir grains will grow so pass some on every so often to friends to stop your jar becoming over crowded.
