This is the first year we’ve bought Fazenda Caxambu, but we hope it’s not the last. This coffee is our ideal Brazilian coffee: hazelnut flavours, toffee sweetness, all supported by a rich velvety mouthfeel. Drink this coffee with milk and it’s like a dessert in a cup.
According to the importers of this coffee, the Chaves de Brito family has been farming coffee on the rolling hills of Brazil’s Sul de Minas region for over a century. The current generation—Denise, Letícia, Carmem Lucia, Paulo Fernando and Paulo Roberto—are passionate about producing top quality coffee on Fazenda Caxambu.
Pickers at the farm make several passes over the plants during the harvest period to ensure the cherries are fully ripe when picked. Then, like almost all coffee in Brazil, it is processed using the natural method. This means the whole cherries are dried on vast concrete patios, with workers turning them regularly with large rakes to ensure even drying. Once the coffee reaches an optimal moisture level (10-12%) the dried fruit is removed from the bean and the coffee is rested in the farm’s warehouses until it is exported.
