Labrus bergylta
Our fishers catch a number of different types of wrasse, but Balan Wrasse (Labrus bergylta) is the most common.
Wrasse are incredibly colourful fish, almost exotic in appearance, especially the cuckoo wrasse. Their beautiful scales are hard and tough, so we sell our fillets skinless and this reveals their pure white, firm flesh.
Wrasse has a mild flavour, and an almost 'crunchy' texture. It is an under-utilised species, and is currently being transported live to salmon farms in Scotland where it is used to mingle with the salmon and clean them of lice. Better that than using chemicals perhaps but it seems a waste not to eat them !
There is little scientific data on wrasse, but our fishers catch it with either handline or static net and in small numbers so we are not contributing to any decline in the stock, though anecdotal evidence suggests they are reasonably abundant.
