Cooking Information
Pre-heat the oven to 190C / Gas 5. Wrap the fish in a foil parcel with a know of butter and a squeeze of lemon. Bake for 12-15 minutes, until cooked through.

Deep fried in batter, it's almost indistinguishable from cod or haddock so a good alternative - they come from the same family. Fillets are meaty and, especially near the tail, largely boneless so it's good for baking. Pollack is known as lythe in Scotland and while common all around the UK coast, it is a particularly large fishery for our Plymouth fishers.
There is insufficient information available to evaluate stock biomass and fishing mortality for pollack. The best choice to make, in terms of selectivity, is handline-caught pollack. The handliners may occasionally catch an immature fish under 50cm, but when they do, they quickly move on to shoals comprised of larger fish. The gill netters are also a good choice, and only very rarely catch immature pollack as the size of their mesh means the smaller ones swim through.
