Cooking Instructions
Dust the fillets in flour. Pan-fry in a little oil and butter, 2-3 minutes on each side, until cooked through. Season with salt and pepper and squeeze over a little lemon juice.

Another chip shop favourite. It's a right-eyed, oval-shaped flatfish with characteristic reddy orange spots and a pearly white underside. Its orange spots are an indication of freshness; brighter spots mean a fresher fish. Found all around our shores down to considerable depths, plaice is a long-lived species and subject to high fishing pressure due to it’s popularity.

The state of plaice stocks around the UK vary, but the biggest threat to their stock status is the significant discarding. An incredible 33% of undersized plaice are discarded in beam trawl fisheries for flatfish (sole and plaice) in the southern North Sea. In 2013 68% of plaice caught in the Irish Sea beam trawl fishery were discarded and 75% discarded in similar fisheries in the Celtic Sea, largely as a result of a mismatch between the Minimum Landing Size for plaice (27 cms) and the mesh size (80mms) in use in mixed beam and demersal trawl fisheries for plaice and sole. While there have been improvements in beam and demersal trawl fisheries over recent years, our static netted plaice discard virtually nothing and yet hitherto have not been financially rewarded for the extra care taken.

Sole of Discretion supports those fishers who discard nothing and do little damage to the sea bed with their static nets. Plus they generally catch the larger sized plaice as it tends not to be their target fishery, rather they are trying to catch larger turbot, where the mesh size is bigger.
