Use organic black badger Carlin peas, also known as black or grey peas have a distinctive nutty taste. They make a good substitute for chick peas. In Lancashire they have been traditionally served as parched peas - simply boiled and eaten with salt and vinegar. They can be used to make falafel, hummus and can also be added to soups, stews, curries and more!
