A deliciously flavoured sausage made with pork from our free-range pigs, including star anise, garlic and cinnamon ... sounds quirky (recipe comes from a Parisienne Chef !), but seriously these are great flavours to have with pork and thrown together with rice, thinly sliced fennel, broad beans, a squeeze of lemon a dribble of olive oil etc etc ..... !
