Borage (or starflower) is grown in this country for its oil, which has medicinal properties. Some of our Somerset bees visit Essex for their summer holidays, where they help to improve this harvest. The blue flowers are enthusiastically visited by the bees and also provide our Pimms with its traditional garnish. The resulting straw-pale honey is delicate and mild, making it a good choice for use in herbal teas. Children love it too.
We don't pasteurise the honey as this kills the good bacteria and enzymes. It also means the honey will granulate over time. If you heat it gently the honey will become runny again.
Honey is not suitable for infants under 18 months.
