This cake was featured in the first Vegan Connection magazine. When the guys behind VC asked me to create a recipe for them I thought about experimenting with spices and create something different from my usual cakes. I wrote this recipe at the start of autumn and wanted to use the best seasonal fruits. I went to my weekly market and there were a lot of juicy pears....that's when the idea of making a pear and cardamom cake came to my mind.
This Pear & Cardamom cake only contains:
Cardamom, Cashew nuts, Coconut oil, Dates, pears, pistachio, Salt, walnuts
The chocolate sauce on top is only coconut oil, maple syrup & raw cacao powder.
All my cakes are dairy, eggs and refined sugar free. I do not use ingredients containing gluten.
