Yacon is a South American tuber which has a crunchy, juicy texture. It can be cooked or eaten raw (shaved into salads). The flavour is similar to pear. Yacon means 'water root' and therefore it takes on the flavours surrounding it. It can also be juiced to create a refreshing drink and to create a syrup. One plant will yield 3-4kg of tubers.
