Balhomais Farm - Romanesco
A distinct nutty flavour described as more intense than broccoli. Tastes like a cross between a broccoli and cauliflower. Can be prepared like broccoli or cauliflower – blanche briefly then toss with hot pasta and cheese; boil until tender then puree with garlic, cream and parmesan; sauté in a hot skillet and stir in a mixture of miso, red pepper, anchovy, almonds and water. To store, place in a plastic bag and refrigerate.
