Alice's Garden - Aubergine Pickle

A delicately spiced, Indian style pickle made with tomatoes, onions and chillies grown on my allotment. Works well as an accompaniment to curry and an as-you-like-it chutney (mine's cheese on toast - on the toast with the cheese melted over the top and a sprinkling of black pepper. A winter Sunday teatime favourite).

Ingredients: aubergine, tomatoes, onions, *malt vinegar, sugar, chilli, spices *mustard seed.
