We are a small farm run by myself (Dawn) my husband Adam and our 2 girls Elise and Tara. We keep a small flock of sheep (45) and 8 pigs at a time. Although they are not our pets we look after them as such during their time on the farm. Our meat from these can be bought and (with pork sourced separately) I make our National Award-Winning sausages and bacon every week. We have 4 national awards so far, including our Lincoln, Gold (traditional), Chilli&Garlic and local-ale containing sausage. We use only the best cuts of hand selected pork, carefully balancing other ingredients to provide a moist sausage that doesn't shrink. We use super-soft silky skins so there's no tough coating rolling round as an after-taste. Our process is quite unique and you'll taste that compared to other butcher's sausage. Not everyone will like ours in preference to their current supplier but many will. Our bacon is equally unique, dry curing in our personal recipe, using some of our own locally grown herbs and spices and using no Potassium Nitrate/Salt Petre - this adds nothing to flavour and has substantial health risks. Ensuring an honesty of taste we smoke our bacon (and other products) over oak briquettes in a traditional process (as compared to most commercial smoked goods which are a spray-on flavouring)
We expanded our knowledge of food production, kitchen skills and a passion for great food into oak-smoked cheese and garlic and now more recently into an extensive vegetarian and vegan range to include several flavours of burger, individual roasts and beautiful stuffed portebello mushrooms with smoked cheese and garlic.
Our Pork and Lambs, Hoggett and Mutton can be purchased as whole, halves and quarters or the separate cuts you might usually expect. We also source local prime beef, which we hang at America Farm for a minimum of 35 days and then cut by traditional means giving you access to classic cuts like fillet, sirloin and rump but also lesser known and used cuts suck a onglet steak, flank, neck, chuck (many of which are available smoked by us)
